I’m pretty sure this is the best white wine we have ever offered. It is certainly the most insane white value we have ever offered. I did not know the price when we tasted it and I simply said “I would not be surprised if this is $75".

So I was extremely pleased to learn we can offer it to you at the lowest online price in the US - $34.99 per bottle. Inexpensive it is not, but this is one of those moments where the wine is worth every penny and then some.

This also happened to be the first wine I have ever tasted from Defaix, but it won’t be the last.

Chablis is a long-established, virtually staid place and you know that because the term “Chablis” has stood in for boring white wine for nearly a century in the U.S. marketplace. Except that Chablis is not and maybe has never been a staid place. Some of the greatest Chardonnays in the world come from the fossil-rich, Kimmeridge hills; from the famed names like Dauvissat and Raveneau and from recently discovered (for me very recently) producers like Defaix, whose ancestors have been making wine here for more than four centuries. He is so Old School: long, native ferments, sometimes a month long, low SO2 levels, little new oak, native malo-lactic and no fining or filtration. 

All that put together produces a delicious white wine that is only incidentally made from Chardonnay. And will age an extremely long time too…

If you’re into high end white wine - you’re gonna want some of this. If you’re into awesome wine and just don’t drink that much white - I still recommend giving it a whirl.

I think it’s that good.

I know what I'm drinking tonight (and maybe this weekend too 😂)!
