Stainless steel fermenters, retaining fresh, bright fruit so much so that they recommend you give the wine a slight chill before you drink it. It’s 100% Nebbiolo so don’t chill it too much; it will make those burly Nebbiolo tannins get pretty jangly. But the Grasso family has four generations of experience with the grape, and own 70 acres of prime Barbaresco vineyards.
