
Bohigas Xarel-lo
No one cares about Xarel-lo like I do; I accept that. But anybody making good cava loves Xarel-lo. Among the grapes that comprise nearly all of Spanish cava, Xarel-lo is nearly universally acknowledged as the best of the three. And those people who don't think it’s the tops, well, they’re just wrong. The winery that makes this dates back to the 13th century, just west of Barcelona, and is farmed organically. Oh, hell, just chill and drink like you’re thirsty.
